Muntok White Pepper is grown on the small island of Bangka, located just off the eastern coast of Sumatra (Indonesia). It is prided for its hot, creamy flavour which is the perfect complement for seasoning braises and marinades, soups, grilled meats and seafood dishes.
Fruit spikes of red ripe pepper berries are handpicked and packed into rice sacks, then soaked in slow running streams of water that flow down from the mountains above. After 7 days, the outermost skin of the pepper has disintegrated. The peppercorns are then piled together to go through a traditional trampling which separates the peppercorns from the fruit spike. After a final washing, the peppercorns are left to dry in the sun.
Whole peppercorn can be ground using traditional pepper grinders, or use a motar and pestle for a perfect coarse grind for dry rubs.
