Wanton Noodle tossed in Oyster Sauce RECIPE

This wanton noodle recipe is versatile to serve with any dishes. It is as good on it’s own as well. You need to try David Yip’s homemade oyster sauce. Which is made using fresh oysters harvested from the open sea.

Method

  1. In a pot, bring the water to a boil. The amount of water must be sufficient to maintain a temperature close to 100°C after adding the noodles.
  2. In a serving bowl, add all the sauce ingredients, except the cooking oil. In a small pan, heat oil to smoking point, pour the hot oil into the sauce mixture, mix well.
  3. Loosen the noodles gently with your hands, and add into the boiling water. Keep stirring the noodles with a pair of wooden chopsticks.
  4. After 20 seconds, remove the noodles using a strainer, and rinse under running tap water. Drain well and return into the boiling water for 2-3 seconds.
  5. Remove noodles once again, drain noodles well and add into the serving bowl with the sauce. Toss well.
  6. Blanch chye sim in boiling water. Drain and top it on the noodles.
  7. Garnish with deep-fried shallots and spring onion. Serve together with your favourite dishes such as Char Siew, Wantons and Shredded Chicken
