Ingredients

4 skin-on, boneless chicken thighs (or any skin-on chicken pieces)

MARINATE

  • 12g Nyonya Five Spice Powder
  • 1 tbsp hoisin sauce
  • 1 tbsp oyster sauce
  • 2 tbsp honey
  • 1 tbsp dark soy sauce
  • 1 tbsp light soy sauce
  • 3 garlic cloves, finely grated

BASTING SAUCE

  • 2 tbsp honey
  • 1 tbsp dark soy sauce

GARNISHING

  • 1 lime
  • 1 red chilly
  • 15g black sesame seeds
  • parsley

Method

  1. In a large bowl, combine the hoisin, honey, oyster sauce, dark soy sauce, light soy sauce, garlic and Nyonya Five Spice Powder. Add the chicken pieces and mix until well coated. Marinate for at least 6 hours and up to overnight.
  2. Preheat oven to 180°C/356°F (fan-forced). Line a large baking tray or roasting dish with foil to ease cleaning later. Place the chicken pieces onto the baking rack. Cook in the oven for 10 minutes.
  3. Mix the basting sauce ingredients together in a small bowl. Remove the chicken from the oven and brush the top of the pieces with the basting sauce. Place back into the oven to cook for a further 5 minutes or until cooked through.
  4. Sprinkle black sesame seeds onto chicken. Garnish with lime, red chilly and parsley. Good to enjoy with rice!
